Not only are smashed potatoes the easiest side ever, they're fun to make! And bonus- they taste like homemade French fries!
1½ lbs new potatoes or fingerlings
½ c Colavita Extra Virgin Olive Oil
⅓ c Parmesan, grated
1Wash the potatoes and place in a large pot of generously salted water. Boil until just tender, about 12-15 minutes. Drain.
2Preheat the oven to 450F.
3Transfer the potatoes to a baking sheet and crush to about ¾ in thick. Use a potato masher, fork, your hands, or get creative!
4Drizzle the olive oil over the potatoes, then top with parmesan.
5Bake 20-25 minutes, or until potatoes are golden and crispy and the parmesan is melted.
