Asian-Inspired Gnocchi

Bring Italian and Asian cuisine together with this Asian-inspired gnocchi dish! Gnocchi plus shaved pork and broccoli, plus a ton of different spices and sauces? YUM!

Ingredients

 3/4 lb shaved pork
 2 tbsp Colavita Extra Virgin Olive Oil
 2 cups chopped broccoli
 3 cloves garlic (pressed)
 2 inches ginger (grated)
 3 scallions, chopped
 1 tbsp soy sauce
 2 tbsp cooking wine (dry sherry, marsala, or white wine will do)
 2 tbsp rice vinegar
 1.5 tbsp honey
 1 tbsp sesame oil
 1 tbsp sriracha
 Chile flakes
 Sesame seeds

Directions

Heat the Colavita olive oil in a large skillet or wok over medium heat.

Add in the pork and sear it, cooking until it is browned on all sides.

Add in the broccoli and cook until the pork is cooked through and the broccoli is steamed.

Add in the garlic, ginger and cook 2 minutes.

Add the soy sauce, cooking wine, rice vinegar, honey, sesame oil, and sriracha.

Add in some chili flakes to taste.

Bring a large pot of water to a boil. Once it is boiling, salt it generously. Add the gnocchi to the pot of water and cook according to package instructions (about 2 minutes). The gnocchi will float to the top of the water surface once they are cooked.

Using a slotted spoon, remove the gnocchi from the water and place them in the skillet with the broccoli and pork.

Toss to coat. Add a little Colavita Olive Oil if the mixture seems dry.

Remove from heat.

Garnish with sesame seeds, chopped scallions, and chili flakes.
