Looking for easy comfort food that is adult and kid approved? Look no further than this Baked Mac & Cheese recipe! Blend cottage cheese with your liquid ingredients to create a deliciously creamy sauce.

 1 ¼ cups full-fat cottage cheese
 2 cups whole milk
 1 teaspoon kosher salt
 1 teaspoon black pepper
 ½ teaspoon ground mustard powder
 ½ teaspoon smoked paprika
 Pinch of cayenne pepper
 8 oz block cheddar cheese, grated (do not use aged cheese or pre-grated cheese)
 8 oz block gouda cheese, grated (use smoked gouda for extra flavor)
 ½ lb Colavita Elbow Pasta
 2 tablespoons unsalted butter

Preheat the oven to 350°F. Grease a 9-inch round baking dish or 9-inch square baking dish with 1 tablespoon of butter, reserving remaining butter.

Blend the cottage cheese, milk, salt, pepper, ground mustard, paprika, and cayenne until smooth. Pour into a large bowl, then stir in uncooked Colavita Elbow pasta and both grated cheeses, reserving a handful of the grated cheese for topping later.

Pour the pasta mixture into a greased baking dish, cover with foil, and bake for 40 minutes.

Remove foil, add the reserved grated cheese on top and dot the surface with the remaining butter. Bake uncovered for an additional 30-45 minutes, or until the cheese is bubbling and pasta is cooked through.

Allow to rest for at least 15 minutes before serving.
