These baked oatmeal muffins are the perfect morning time snack for when you're on the go or just need an extra boost of energy to make it until lunch.

Baked Oatmeal Muffins

 2 cups oats
 1 tsp cinnamon
 1 pinch nutmeg optional
 1/4 tsp salt
 1 cup mashed bananas - about 2 large
 2/3 cup milk
 2 large eggs
 2 tbsp Colavita Pure Oil or Extra Virgin
 1/4 cup maple syrup
 1 bar Perugina Dark Chocolate 51%, broken into small chunks
 1/3 cup chunky peanut butter

Preheat the oven to 400°F. Grease a 12 cup muffin tin.


Whisk together the oats, cinnamon, nutmeg (if using) and salt in a large bowl.


Whisk together all remaining ingredients (EXCEPT chocolate chips) in a large measuring jug.


Pour wet into dry ingredients, stir well and fold in chocolate chips.


Divide mixture between muffin cups, gently shake them to level out. Either cover and refrigerate overnight or bake right away for 20 minutes or until the top is golden brown.
