 2 tbsp Greek yogurt
 1 tsp garlic powder
 1 tsp ground black black pepper

Heat 2 tbsp Colavita olive oil in a small skillet over medium-high.

Add onion and sauté until soft and caramelized, stirring frequently. This should take about 20 minutes.

During the last minute, pour in the 1 tbsp Colavita Balsamic Vinegar and stir to combine.

Remove from heat and cool 5 minutes. Store in the refrigerator in a sealed container for a week.

Combine the yogurt, garlic powder, salt pepper, and ground beef in a bowl, stirring just until combined.

Gently shape mixture into 4 (1/3-inch-thick) patties.

Heat a grill, grill pan or cast-iron skillet over high heat.

Drizzle the burger patties with Colavita olive oil.

Add patties and cook 3 minutes. Flip the patties and cook 2-3 more minutes or to desired degree of doneness.

Spread ketchup evenly on bottom halves of buns. Top the patties with a cheese slice each, some lettuce and any other topping desired (such as pickles or tomatoes).

Cover with top halves of buns.

To make the ketchup, purée all the ketchup ingredients in a food processor or blender. Store in an airtight container for 2 weeks.
