Bitter Greens Salad with Spicy Balsamic Vinaigrette

 ¼ cup Colavita Balsamic Vinegar
 1 tbsp Dijon Mustard
 1 shallot, minced
 2 or 3 Colavita Hot Chili Peppers, minced
  cup Colavita Premium Selection Extra Virgin Olive Oil
 5 oz mixed greens like frisee, endive, radicchio washed, dried and cut into small pieces
 fresh parsley and parmesan cheese shavings for garnish

To make the dressing, combine all the ingredients in a food processor or blender and pulse until emulsified. Store in a sealed container in the refrigerator for up to a week.

Place your washed and dried greens in a salad bowl. Season them with salt and pepper. Drizzle with the salad dressing and toss to coat all the greens.

Sprinkle with fresh parsley and shavings of parmesan cheese.
