Brown Butter Pumpkin Gnocchi @imcurrentlycraving

 1 package gnocchi
 2 cups water
 ½ cup pumpkin puree
  cup soft herb cheese
 1 tbsp olive oil
 1 tbsp parmesan cheese
 flakey salt

Boil gnocchi until they float to the top (about 3 minutes) and strain

Add butter to a pan over medium/high heat and cook until light brown and fragrant, then
add gnocchi back in and toss to coat with brown butter

Lower heat and add pumpkin to the pan with a little bit of water

Once combined, turn off the heat and add in cheese with another splash of water. Toss
to coat the gnocchi in the sauce

Plate the gnocchi and top with olive oil, parm and flakey salt
