This recipe for Cacio e Pepe Gnocchi is a quick and delicious recipe we developed specifically for our gnocchi. Colavita Gnocchi are fresh and vacuum packed—no one will know you didn’t make them by hand! The tarragon adds a bright flavor to this traditional dish. Dinner will be on the table in under 30 minutes!

Cauliflower Gnocchi

 1 package Colavita Gnocchi
 4 tbsp grated parmesan cheese
 2 tbsp Colavita Extra Virgin Olive Oil
 1 tbsp dried tarragon
 ½ tsp black pepper
 Kosher salt for the water only

Bring a large pot of water to a rolling boil. Once boiling add a handful of kosher salt.


In a large mixing bowl, combine the parmesan, Colavita Olive Oil, tarragon and pepper. Mix to form a paste.


Add the Colavita gnocchi to the boiling water. When the gnocchi are done, they will float to the top of the water. Skim them off and place them into a colander.


Add all the cooked gnocchi to the mixing bowl with the herb mixture.


Using a large spoon, mix the gnocchi with the paste well so that every gnocchi is coated.


Serve with extra parmesan if desired!
