Vegetarians, rejoice! Here's a great way to throw some tofu on the grill this summer with our cajun grilled tofu. Pair with some asparagus and carrots and you've got yourself a great summer dinner!

Cajun Grilled Tofu

For the Spice Mix:
 3 tbsp smoked paprika
 2 tbsp fine kosher salt
 2 tbsp garlic powder
 1 tbsp ground black pepper
 1 tbsp ground white pepper
 1 tbsp onion powder
 1 tbsp dried oregano
 1 tbsp cayenne
 ½ tbsp dried thyme
For the Tofu:
 12 oz package of extra firm tofu
 2 tbsp Colavita Extra Virgin Olive Oil, plus more oil for grilling
 2 tbsp soy sauce or tamari
 1 ½ tbsp maple syrup
 1 tbsp Cajun spice mix (from above)
 ½ tsp salt
 Garnish: fresh chives
First make the Cajun spice mix:

Mix all ingredients together in a bowl or spice jar until evenly combined. Use immediately, or store in a sealed container for up to 1 year.

For the Tofu:

Drain the package of tofu and wrap the tofu block in a layer of paper towels. Press the tofu by placing it between 2 large plates. Weigh down the top plate with something heavy, like a bag of flour, large can of tomatoes or heavy recipe books. Let the tofu sit for 15 to 20 minutes. This will squeeze out any excess water, which will be absorbed by the paper towels.


Slice the tofu into 6 slices along the long side and place into a baking dish or rimmed platter.


In a medium bowl, mix 1 1/2 tablespoons of Colavita olive oil, soy sauce, maple syrup, Cajun spice powder, and salt.


Pour the marinade over the tofu and let it sit for at least 15 minutes or cover the bowl and marinade the tofu overnight in the refrigerator.


Heat your grill to a medium-high heat (450°F). Place the tofu slices on the grill and Cook the tofu until you see grill marks on the tofu, about 2 to 3 minutes per side.


Heat up any remaining marinade in a saucepan and drizzle the sauce over the grilled tofu for more flavor.


Garnish with fresh chives.
