Bring a little spice to your outdoor grill with this easy and delicious recipe for Cajun Shrimp and Sausage Skewers. Shrimp and sausage are a perfect pair for your grill (or grill pan!). Serve alongside mini corn on the cobs and you’ll have a light and satisfying meal.

For the Spice Mixture:
 2 tbsp smoked paprika
 2 tsp cayenne pepper
 2 tsp garlic powder
 1 tsp dried oregano
 1 tsp drier thyme
 1 tsp salt
 ½ tsp freshly ground black pepper
For the Skewers:
 1 ½ lbs medium shrimp, peeled and deveined
 1 (12.8-ounce) package smoked andouille sausage, thinly sliced
 2 tbsp Colavita Extra Virgin Olive Oil
 1 tbsp chopped fresh chives & parsley
For the Corn:
 4 corn on the cobs, husked and cut in half
 Colavita Olive Oil
For the Sauce:
 1 cup Greek yogurt
 2 tbsp ketchup
 4 Colavita Hot Chili Peppers, minced
 1 tbsp lemon juice (freshly squeezed)
 2 tsp horseradish
 1 tsp Worcestershire sauce
 1 tsp smoked paprika
 Pinch of salt
First Make the SpiceMixture:

Combine all the spices for the spice mixture in a small bowl or glass jar.

Make the Sauce:

Whisk together all the sauce ingredients in a small bowl; set aside. Refrigerate for up to one week in a sealed container.

Prepare the Skewers:

In a large bowl, combine shrimp, Colavita olive oil, and half of the spice mixture.


Cover, and refrigerate, turning occasionally, for at least 30 minutes.


Heat your grill or grill pan to medium high.


Drizzle the corn with Colavita olive oil and then rub it over the cobs so it is well coated. Place the cobs directly on the grill and grill for about 20 minutes, rotating every 5 minutes so they brown evenly.


Remove from the heat and sprinkle with the remaining spice mixture.


Thread shrimp and sausage onto 4-inch-long skewers or toothpicks.


Add skewers in a single layer and grill until shrimp are opaque and sausage is slightly softened, about 3 minutes per side.


Serve immediately with sauce, garnished with chives and parsley.
