Make the best of late summer’s produce with this easy but show-stopping Caprese Stack! Vine ripened tomatoes are layered with fresh mozzarella and basil and drizzled with Colavita olive oil and balsamic glaze for a fresh, seasonal treat.

 3 large tomatoes, each cut into 4 1/4-inch-thick slices (reserve any extra for another use)
 1 8-oz. log fresh mozzarella, cut into 1/4-inch-thick slices
 Colavita Balsamic Glaze
 Colavita Premium Selection extra-virgin olive oil
 Fresh basil leaves
 ½ tsp kosher salt
 ½ tsp freshly ground black pepper

Season the tomatoes with salt and pepper.

Place a slice of tomato on a plate.

Top each with a slice of mozzarella, then a basil leaf. Repeat layering about 4 more times

Top each stack with a basil leaf.
