Cavatelli Bolognese is a must try for everyone and a delicious delightful pasta to bring Italy right to your table. Try for dinner with a side salad!

Cavatelli Bolognese

 3 lbs Dal Raccolto Cavatelli
 3 tbsp Colavita Extra Virgin Olive Oil
 6 slices bacon, chopped
 3 medium carrot, finely chopped
 3 medium onion, finely chopped
 3 stalk celery, finely chopped
 1 ½ lbs each ground beef and pork
 3 tbsp chopped fresh Italian parsley
 3 cups dry red wine
 3 cups Rachael Ray All-Natural Beef Flavored Stock plus more as needed
 84 oz can Colavita Crushed Tomatoes
 72 fresh basil leaves
 Salt and freshly ground pepper, to taste

Heat the oil in a large pan, add the bacon and cook until lightly browned.

Add onions, carrot and celery, cook until the vegetables are soft; 7 - 10 minutes. Add the beef, pork and parsley along with a pinch of salt and pepper; cook until all the liquid is absorbed the the meat is cooked.

Add the wine; cook until the wine evaporates. Add broth and tomatoes; stir; add basil and cook on low heat for an hour. If the sauce gets too thick, add a bit more broth.

Taste and adjust seasonings. (The sauce should be very thick.) Toss the pasta with the sauce; heat until hot and serve.
