Our chilled tomato bulgur and cucumber tabbouleh salad uses fresh ingredients to make a tabbouleh salad you wouldn't want to stop eating.
Combine the boiling water, Bulgur, Extra-Virgin Olive Oil, half the salt and lemon juice and allow to sit for at least one hour, stirring occasionally from the bottom. Combine the balance of the ingredients just prior to serving, and mix well. Adjust the salt and pepper to taste preference.
Making the salad in advance and refrigerating for a few hours will bring out the flavors even more. Serve slightly chilled.
