Chocolate Kiss Cocktail

This Valentine’s Day inspired cocktail is sure to make you fall in love…with chocolate! Mix up a few with your special someone this Valentine’s Day and cheers to love, chocolate and olive oil!

Makes 2 cocktails

For the dark chocolate fudge sauce
 2/3 cup heavy cream
 1/2 cup light corn syrup
 1/2 cup packed light brown sugar
 2 3.2 ounce bars Perugina 70% dark chocolate
 1/4 teaspoon salt
 1 tablespoon Colavita Olive Oil
 2 teaspoons vanilla extract
For the martini
 3 ounces vodka
 1 ounce chocolate liqueur (we used Godiva)
 3 ounces dark chocolate fudge sauce, plus extra for drizzling inside the glass
 4 ounces half and half
 dash of chocolate or vanilla bitters
 Pink sugar crystals for rimming the glass

Begin by making the chocolate fudge sauce. In a medium saucepan, combine the heavy cream, corn syrup, brown sugar, salt, and half of the chocolate.

Bring to a boil.

Reduce heat slightly and simmer gently for a couple minutes or until chocolate has melted.

Remove from heat and add remaining chocolate, butter, and vanilla. Stir to combine and until all chocolate has melted. Set aside to cool completely before making the cocktails.

TIP: It’s helpful to pour some of the fudge sauce into a squeeze bottle, so you can easily apply it to the side of the martini glass.

To make the cocktails, pour some of the dark chocolate fudge sauce on a small plate and some pink sugar crystals on another. Rim the glass in the fudge sauce, then dip into the sprinkles to adhere.

Drizzle some of the chocolate fudge sauce on the inside of the glass. Add a few ice cubes to a cocktail shaker. Add the vodka, chocolate liqueur, chocolate fudge sauce, half and half, and bitters. Shake for 20-30 seconds, then pour into glass. Enjoy!
