A unique twist on pasta, this cinnamon raisin pasta is the perfect lunch for those looking for something sweet and filling.

Cinnamon Raisin Pasta

 1 lb Colavita Whole Wheat Fusilli
 2 apples, cored and cubed
 1 cup pecans
 1 cup currants or raisins
 3 tbsp maple syrup
 3 tbsp Colavita Extra Virgin Olive Oil
 2 tsp ground cinnamon
 ½ tsp freshly ground black pepper
 ½ tsp sea salt
 Grated pecorino romano or parmesan for topping

Bring a large pot of salted water to a boil. Cook the pasta according to the directions on the packaging. Drain.


Heat up the Colavita Olive Oil and maple syrup in a large skillet over medium heat. Add the apples, pecans and currants and stir to coat evenly with the oil and syrup.


Add the cooked pasta to the skillet and stir to coat.


Add the cinnamon, black pepper, sea salt and stir to coat. Simmer for 10 minutes until the apples are soft. If the pasta seems dry, add a bit more Colavita Olive Oil.


Remove from the skillet and serve with freshly grated Pecorino or Parmesan Cheese.
