Classic Gazpacho

What's better than a classic gazpacho? Throw all of these fresh ingredients into a blender and within minutes have a meal prepared for the whole family.

Classic Gazpacho

 2 lbs large ripe tomatoes, cored and cut into large chunks (about 3 tomatoes)
 1 small cucumber, peeled and cut into large chunks (about 12 oz.)
 1 small clove garlic
 ¼ mall Vidalia onion, cut into 1-inch chunks
 ½ cup loosely packed fresh basil; more for garnish
 1 tbsp Colavita Aged Red Wine Vinegar
 1 ½ tsp kosher salt
 ¼ tsp freshly ground black pepper
 ½ cup Colavita Extra Virgin Olive Oil, plus additional for drizzling

Put the tomatoes, cucumber, garlic, onion, basil, vinegar, salt, and pepper in a blender and puree until smooth. With the blender running, add the olive oil. Season to taste with salt and pepper. Serve at room temperature or refrigerate until cold. If serving cold, whisk or blend again before serving. Serve drizzled with a little olive oil and some basil leaves.
