While lamb loin chops are expensive I like to use lamb steaks either cut from the leg bone-in or in this case shoulder chops, great prices and flavor at half the price. The minted vinegar EVOO dressing works perfectly with this protein, and the string beans are a natural side again drizzled with some Colavita EVOO.

Colavita by Mike Colameco: Lamb Chops and String Beans

 2 lamb shoulder chops
 1/2 lb of string beans
 2 tbsp Colavita Balsamic Vinegar
 8 leaves, fresh mint
 2 tbsp Colavita Extra Virgin Olive Oil
 salt and pepper to taste

Cook the string beans in boiling salted water until tender then drain and keep warm.

Brush the chops with EVOO and season with salt and pepper, grill on both sides until done.

Dice 8 leaves of fresh mint and mix them with the balsamic vinegar.

Plate the beans and the chops, spoon the minted vinegar over the chops and drizzle Colavita EVOO over the beans. Season again as needed and serve warm.
