Cracked Olive Oil Chimichurri by @sarah_licious_eats

 1 jar Colavita Country Style Pitted Olives
  cup Colavita Red Wine Vinegar
 1 box Colavita Chickpea Beans, rinsed
 1 ½ cups turkey deli meat, chopped
 ¼ cup parsley
 ¼ cup cilantro
 1 cup mini mozzarella balls
 1 tbsp dijon mustard
 ½ tsp salt
 ½ English cucumber, diced
 1 clove garlic
 ½ shallot, chopped

In a bowl add cucumber, shallot, parsley, cilantro, turkey deli meat, mozzarella balls, and the rinsed chickpeas.

Next use all the extra virgin olive oil in the olive jar and chop the olives in the jar.

Add them to your bowl and make your dressing (red wine vinegar, dijon mustard, salt, and garlic).

Mix together and place into an air tight container for up to 4 days in the refrigerator.
