Cucumber Salad with Feta, Dill, Pistachios and Pickled Onions

Our cucumber salad with feta, dill, pistachios and pickled onions is an amazing winter salad - it's got all great qualities that pair with any holiday menu.

 ¼ cup Colavita Prosecco White Wine Vinegar
 ½ tsp salt, plus and extra pinch for the salad
 2 tbsp minced red onion or shallot
 2 cucumbers, thinly sliced
 2 tbsp chopped fresh dill
 3 oz feta cheese, crumbled
  cup unsalted pistachios, roughly chopped
 2 tbsp Colavita Extra Virgin olive oil
 ¼ tsp freshly ground black pepper

First, quickly pickle the onion. To do this, add the Colavita vinegar and salt to a small saucepan and bring to a simmer over medium heat.

Once simmering, add in the minced red onion or shallot and remove from the heat. Let the onion steep and cool in the vinegar for 10-15 minutes.

In a large serving bowl combine the cucumbers, feta and pistachios.

Pour the onion and vinegar mixture over the top of the salad.

Drizzle with about 2 tbsp of Colavita olive oil and sprinkle with freshly ground black pepper and a pinch of salt.

Toss everything together until well coated. Garnish with fresh dill.
