Cucumbers with Goat Cheese, Pine Nuts, and Honey

This cucumbers with goat cheese, pine nuts, and honey recipe takes less than 10 minutes to make and even less time to eat!

 24 thin slices seedless cucumber
 4 fresh goat cheese, from a log, cut into 24 pieces
 2 tbsp toasted pine nuts
 1 tbsp Colavita Extra Virgin Olive Oil
 1 tbsp honey
 ¼ tsp sea salt, such as fleur de sel or Maldon

Arrange the cucumber slices on a serving plate or cutting board. Divide the goat cheese among the cucumber slices. Press a pinch of pine nuts into each piece of cheese. Drizzle the olive oil and honey over the goat cheese. Sprinkle with salt and serve immediately.
