A really simple but unbelievably delicious dish that comes together within 30 minutes but tastes like you’ve been cooking it for hours! The combo of the sweet crushed tomatoes, the flavourful Italian extra virgin olive oil and the spicy Nduja salami which melts right in there, creates such a deliciously spicy & flavourful sauce. The Pecorino Romano Cheese, a bold cheese which I prefer on pasta, along with the mild and creamy Stracciatella cheese takes this dish to another level! By the way, the gluten free pasta is so amazing! The same texture and taste as regular pasta in my family’s opinion! I loved the whole process of coming up with and creating different dishes with Colavita’s premium quality products! Sometimes we are rushed for time so I wanted to create a dish that was simple, quick & super delicious. This recipe is all that and then some!

Add a 1/4 cup extra virgin olive oil to a pan and heat for 1 minute.
Add tetrapak of Colavita crushed tomatoes, mix and bring to a simmer.
Add 3 tbsp of Spicy Nduja Spreadable Salami and mix until it melts into tomato mixture (you could add more or less, depending on how spicy you like it).
Add 1/2 cup of water, salt to taste and allow to simmer for 15-20 minutes.
In the meantime, bring a pot of water to boil, add a few tablespoons of salt and add 1 package of gluten-free Penne Rigate.
Cook until al dente, drain, return to the pot and add 1/2 of the tomato sauce, 1/4 cup of freshly grated Pecorino Romano cheese and mix well to coat the penne.
Transfer to a large serving bowl, top with remaining tomato sauce, additional 1/2 cup of Pecorino Romano and dollops of Stracciatella cheese. The dish is now ready to serve, family style!
