Garlic Marinated Grilled Shrimp

The combination of the fresh garlic marinade and large grilled shrimp makes this your new go-to summer meal of choice.

 Italian Herb Marinade (see below)
 2 large shrimp, peeled and deveined with tails removed
 1 tsp hot pepper flakes
 salt and freshly ground black pepper
Additional Tools:
 wooden skewers
Italian Herb Marinade:
 1 cup firmly packed fresh flat-leaf parsley, trimmed of thick stems
 3-4 garlic cloves
 2 tbsp fresh oregano leaves (you can sub 2 tsp dried oregano)
 ½ cup Colavita Extra Virgin Olive Oil
 2 tbsp fresh lemon juice
 1 tsp sea salt
 ¼ tsp freshly grounf black pepper
 ¼ tsp red pepper flakes

Pour the Italian Herb Marinade into a large re-sealable plastic bag with the shrimp.

Seal the bag and marinate in the refrigerator for 2 hours.

Heat up a grill to medium-low heat.

Remove the shrimp from the marinade and discard the extra marinade.

Thread the shrimp onto skewers, piercing once near the tail and once near the head.

Lightly oil grill grate. Cook shrimp for 5 minutes per side, or until opaque, basting with extra Colavita Olive Oil if necessary.

Serve immediately.

Italian Herb Marinade:

Finely chop the parsley, fresh oregano, and garlic and place in a small bowl.

Stir in the Colavita Olive Oil, vinegar, salt, pepper, lemon juice and red pepper flakes. Feel free to adjust the seasonings to your taste.

Use immediately or refrigerate. If chilled, return to room temperature before using. You can store this marinade in the refrigerator for up to a week.
