 ½ Head of cabbage, chopped
 4 persian cucumbers, chopped
 1 bunch green onion, chopped
Dressing
 2 cloves garlic
 1 small shallot
 2 lemons, juiced
 1 bunch chives
 ¼ cup Colavita extra virgin olive oil
 2 tbsp Colavita red wine vinegar
 1 cup cup raw spinach
 10 cashews
 5 walnuts
 8 basil leaves
 3 tbsp nutritional yeast
 1 tsp salt

In a bowl combine cabbage, cucumber, and green onion. In a blender combine garlic, shallot, lemon juice, chives, extra virgin olive oil, red wine vinegar, spinach, basil, cashews, walnuts, nutritional yeast, salt and blend until smooth. Add dressing to the bowl and mix together. Serve with chips
