This hearty vegan cabbage and bean stew should satisfy most meat lovers as it is both rich, tasty, and filling. Finish it off table side with a drizzle of Colavita EVOO and add a few slices of fresh ciabatta or toasted baguette and glass of wine and call it a very healthy meal option. Make extra as it's great reheated the next day or two as well.

Colavita by Mike Colameco: Greens and Beans

 1 onion, diced
 1 whole head of green cabbage split, cored and cut into medium slices
 2 carrots peeled and sliced into ½ inch pieces
 1 whole red or green bell pepper, sliced, cored and cut into large dice
 1 zucchini, sliced into medium dice
 1 head of kale washed and cut into medium dice
 1 jar of borlotti beans
 1 oz Colavita Extra Virgin Olive Oil
 1 cup water
 salt and pepper to taste

Sweat cabbage and onion in a pan with EVOO leaving the lid on the pan for 3 - 5 minutes.


Add the carrots and return the lid for 3 - 5 minutes then add pepper, zucchini, kale, and beans with 1 cup of water and some salt and pepper.


Bring to a simmer then return the lid and lower the flame, cooking covered for 15 minutes. 


Serve warm in serving bowls with a bit more fresh ground pepper and a drizzle of EVOO.
