Heat up your barbecue this summer and grill your corn three different ways! Oil up your corn cobs, let them get a roasted, smoky flavor, and assemble them with your choice of toppings - parmesan and parsley, cheddar, cilantro and lime, or with hot pepper and basil.

Grilled Corn Three Ways

For all:
 6 cobs of corn, husks and silks removed
 ½ cup Colavita Extra Virgin Olive Oil OR Colavita Roasted Garlic Extra Virgin Olive Oil
Option 1: Parmesan and Parsley
 ½ cup chopped parsley
 ¼ cup finely grated parmesan cheese
Option 2: Cheddar, Cilantro and Lime
 ½ cup finely grated sharp cheddar cheese
 ½ cup minced fresh cilantro
 2 tbsp aleppo pepper
 A squeeze of fresh lime juice per cob
Option 3: Hot Pepper and Basil
 2 tbsp Colavita Crushed Hot Chili Pepper Spread
 ¼ cup minced fresh basil
 1 clove of garlic, minced
Equipment:
 Metal tongs
 Pastry brush

Heat up your grill to a high heat.

Remove the husks from the corn. Brush the corn with Colavita Olive Oil using a pastry brush.

Place the oiled corn on the grill and rotate it while it roasts, about every 5 minutes. This will ensure an even browning all around the corn cob. Roast the corn for about 20 minutes, then remove it from the grill and place it onto a platter.

Assemble your toppings.

Option 1:

Brush the grilled corn with some Colavita Olive Oil. Sprinkle on the parmesan cheese all around the cob. Sprinkle the chopped parsley on top. Serve.

Option 2:

Brush the grilled corn with some Colavita Olive Oil. Sprinkle on the cheddar cheese all around the cob. Sprinkle the chopped cilantro on top, as well as the Aleppo pepper. Squeeze a wedge of lime all around the cob. Serve.

Option 3:

Pour the Colavita Olive Oil into a small bowl. Add the Colavita Crushed Hot Chili Pepper Spread and mix to combine. Brush the grilled corn with the olive oil and pepper mixture. Sprinkle the chopped basil and garlic on top. Serve.
