If your waiting to fire up your grill, don't waste any time. Taste the summer with this Grilled Salmon with fresh herb dressing. The tender fish and spiced dressing is worth the effort of firing the grill. With a hint of fresh lemon juice, you'll be able to taste the summertime.

Grilled Salmon with Fresh Herb Dressing

 4 10 - 12 oz salmon darnes (whole skin on fillet steaks with a bone in the center)
Fresh Herbed Mix:
 2 tbsp chopped parsley
 2 tbsp chopped tarragon
 2 tbsp chopped thyme
 2 tbsp chopped chives
 1 tbsp finely minced garlic
 1 tbsp chopped capers
 2 tbsp fresh lime or lemon juice
 ½ cup Colavita Extra Virgin Olive Oil

Preheat grill to medium high, clean surface well and brush with oil.

Brush the salmon steaks with Colavita EVOO and place on the flesh side of the salmon down on the grill first.

After 4 minutes, turn with a slotted spatula being careful not to break the salmon meat. The salmon should be cooked in 8 minutes, plus or minus a few minutes. It is okay if they are a little pink or medium at the center as they are moister that way.

Once cooked to your desire, place on serving plate and spoon over a few tablespoons of the herbed EVOO mix and serve immediately.
