Grilled Sweet Chili Brussels Sprout Skewers

Makes 10 Skewers

 1 lb of Brussels sprouts stems trimmed and halved
 10 small wooden skewers soaked in water for about 30 minutes
 Chopped cilantro, toasted sesame seeds, and quartered lime for garnish
Sweet Chili Sauce
 1 tbsp Colavita Extra Virgin Olive Oil
 1 tbsp minced garlic
 3 Colavita Hot Chili Peppers minced
 1 tsp minced ginger
 1/2 cup sugar
 3/4 cup water
 ¼ cup Colavita Prosecco Wine Vinegar
 1/2 teaspoon salt
 1 tbsp cornstarch & 1 tbsp water combined for a “slurry”
Sweet Chili Sauce

Heat 1 Tablespoon olive oil over medium heat.

Add minced garlic, peppers, and ginger and cook until slightly fragrant (about 1 minute).

Add the vinegar, sugar, salt, and 3/4 cup water. Simmer for 5 minutes.

Mix corn flour and water mixture into the pot to thicken.

Set aside to cool.

Brussels

Place Brussels in a mixing bowl and microwave for two minutes. Cool before handling.

Toss with sweet chili sauce.

Thread 3 or 4 Brussels per skewer.

Heat your grill over medium-high heat.

Arrange skewers flat on the rack, cover, and cook for 3 minutes on each side.

Transfer grilled Brussels to a serving platter and garnish with toasted sesame seeds,
chopped cilantro, and a squeeze of lime.
