Herb Marinated Salmon

Looking to add a seafood recipe to your summer grilling menu? This herb marinated salmon is perfect for any barbecue or family gathering. If you're feeling bold, use a Himalayan salt block for extra flavor!

 1 cup packed, minced, fresh cilantro
 1 cup packed, minced, fresh flat-leaf parsley
 8 garlic cloves, crushed with the flat blade of a knife
 2 tsp kosher salt
 1 tbsp fresh ground cumin
 1 tsp crushed dried red pepper
 1 tbsp ground sweet red pepper paprika
 ½ cup Colavita Extra Virgin Olive Oil
 ¼ cup Colavita Aged White Wine Vinegar
 6 salmon steaks, each weighing about 6 oz

Place the fish filets in a baking dish or large rimmed plate, making sure they don’t overlap.

Crush the garlic with the sea salt using a mortar and pestle (or using the back of a spoon in a small bowl), to make a paste. Stir in the cumin, dried pepper, and paprika.

Transfer the paste and the herbs to a small saucepan. Add the Colavita olive oil and vinegar.

Warm the herb and oil mixture until it is hot, but not boiling. Taste and adjust the seasoning.

Pour the warm marinade over the fish. Cover with plastic and set aside for 20 minutes.

Heat a grill to medium-high heat.

Place the salmon filets skin side down for crispy skin.

Using a metal fish spatula, flip the salmon filets when they are 60% cooked. A 1-inch thick piece of salmon will cook in 6 minutes for medium rare, 10 minutes for well done, so flip after about 4 minutes for medium rare and 6 minutes for well done. Continue cooking on the other side for the remaining time.

Remove from the grill and allow the salmon to rest for 5-10 minutes.
