
In a large bowl, whisk together the olive oil, white wine vinegar, and dijon mustard until creamy. Season to taste with salt and pepper.
Add the herbs, shallots, feta, and snow peas to the bowl, and toss well to coat.
While still warm, add the cooked Colavita cous and continue to toss until everything is distributed evenly and coated with dressing.
Taste for seasoning and adjust as desired; if the salad feels dry, add a bit more olive oil, but keep in mind that the flavor will absorb as it rests.
Serve immediately if desired, but for the best flavor, allow to marinate for a minimum of 30 minutes before serving warm, room temperature, or cold.
