Indonesian Shrimp Fried Noodle by Regine Tija

This delicious recipe was developed by a student of the Food and Finance High School, Regine Tija, for the 2021 Food Education Fest.

 ½ tbsp and ½ tsp sweet soy sauce
 ½ tbsp oyster sauce
 1 tbsp soy sauce
 ¼ tbsp sesame oil
 ½ tbsp sambal sauce
 3 ½ cloves garlic, chopped
 ½ shallots, chopped
 13-15 shrimps
 ½ cup julienne carrots
 ½ cup cabbage chopped
 1 cup broccoli
 1 egg
 1 ounce cooked egg noodles
 ½ cup green onion, chopped
 Fried shallots

Combine all of the sauces. (sweet soy sauce, oyster sauce, soy sauce, sesame oil, and sambal sauce).

Heat a little oil over medium heat in a wok and sear off the shrimp until fully cooked. And remove it when it is done.

Add a little more oil into the wok and turn the heat to low. Add garlic and shallots.

Sauté them until the shallots are translucent.

Add all of the vegetables, turn the heat to medium, add a little splash of the sauce mixture, and toss them until they are even.

Put the vegetables on the side of the pan. Add a little more oil in the empty space of the wok, add the egg, and cook it into a scrambled egg.

Combine the vegetables and the egg until they are mixed.

Add the noodles, shrimps, and all of the sauce mixtures. Mix until they are even and the sauce is absorbed.

Turn off the heat add the green onions.

Plate. Top with a little green onion and fried shallots. Serve.
