Italian Ramen Salad

The Italian Ramen Salad is our take on the college student's version of a salad. Quick, easy, and you should be able to find all of these ingredients for a low cost!

Italian Ramen Salad

 1 package chicken flavored Ramen noodles
 ¼ cup Colavita White Balsamic Vinegar
 ¼ cup Colavita Extra Virgin Olive Oil
 ½ tsp black pepper
 1 container of arugula or lettuce blend of your choice
 1 jar Colavita Artichoke Hearts in EVOO
 1 jar Colavita Country Style Olives
 1 can of jar of tuna fish
 2 hard boiled eggs, sliced

Separate the spice mix from the ramen noodles. Place noodles in a small sandwich bag, and break them up into small pieces.

Make the Dressing:

Mix together the Colavita Balsamic Vinegar, Colavita Olive Oil, pepper and the ramen spice pack.

Construct the Salad:

First place lettuces in a large bowl. Top with artichoke hearts, olives, tuna, and hard boiled eggs.


Pour dressing over salad and top with crushed ramen noodles.
Note: This would be great with chicken too!
