This simple and healthy lemon and herb couscous with grilled chicken recipe is the perfect meal for a quiet summer night.

Lemon and Herb Couscous with Grilled Chicken

 4 boneless chicken breasts
 4 tbsp Colavita Extra Virgin Olive Oil, divided
 1/3 cup finely chopped yellow onion
 1 1/2 cups Colavita Cous Cous
 2 cups chicken or vegetable stock, plus extra if needed 
 1 cup frozen peas
 3 tbsp finely chopped mint leaves
 2 tbsp finely grated lemon zest
 2 tbsp fresh lemon juice
 2 tbsp minced flat-leaf parsley leaves
 Salt and freshly ground black pepper

First, grill the chicken. Heat up your grill or a grill pan to medium-high (about 450°F for a grill).

Brush the chicken breasts with about 2 tablespoons of Colavita olive oil and season with salt and pepper.

Grill for about 5 minutes per side or until an instant-read thermometer registers 150°F. Remove from the grill and allow to rest for 10 minutes before slicing.

Heat 2 tablespoons of Colavita olive oil in a medium saucepan over medium heat.

Add the onion and cook, stirring, for 2 to 3 minutes, until translucent.

Add the couscous to the saucepan and stir to coat it with the olive oil and onion.

Add the stock and bring the mixture to a boil.

Cover and decrease the heat to low. Simmer for 10 minutes, until tender.

Stir in the peas, mint, lemon zest, lemon juice, and parsley. Replace the lid, and cook 2-3 minutes longer.

Uncover and season to taste with salt and pepper.

The couscous should be tender and fluffy. If it’s too dry, you can add a bit more stock.

Plate the cous cous in a large serving dish. Slice the grilled chicken into strips and place on top of the cous cous.

Finish with a drizzle of Colavita Limonolio, if desired.
