Lemon Poppy Seed Muffins

These lemon poppy seed muffins as a basic staple for anyone who loves the warm texture of a good muffin. Great with a cup of coffee or with tea.

 4 eggs
 1 ½ cups sugar
 ½ cup Colavita Extra Virgin Olive Oil
 1 tsp poppy seeds
 ¼ cup fresh lemon juice
 1 tbsp lemon zest
 1 ½ cups sour cream (not low or non fat)
 1 tsp baking powder
 ½ tsp baking soda
 ½ tsp kosher salt
 1 lb cake flour

Preheat oven to 400 degrees.

Combine eggs, sugar, olive oil, poppy seeds, lemon juice , lemon zest and sour cream in a mixing bowl. Beat well to combine, mixture should be fluffy and slightly glossy.

Sift flour, salt, baking soda and baking powder together in medium size bowl. Fold into wet mixture, stirring just to combine. Do not over beat.

Pour into greased muffin tins. Bake in 400 degree oven for 22 minutes or until toothpick, when inserted into the center comes out clean.
