Lentils, Caramelized Onions, and Dried Figs Yogurt Bowl

This lentils, caramelized onions and dried figs yogurt bowl is a great way to start your day, full of protein, calcium and probiotics.

 1 cup petite French green lentils
 1 bay leaf
 2 garlic cloves
 Colavita Extra Virgin Olive Oil
 Kosher salt
 Freshly ground black pepper
 1 large red onion, thinly sliced
 4 cups plain whole-milk yogurt
 1 cup dried figs, stemmed and diced
 Garnish: chopped flat-leaf parsley

Simmer lentils with bay leaf and garlic in 2 cups water in a small saucepan until tender and water has been absorbed. Toss with evoo, salt, and pepper

Heat a medium sauté pan, lightly coated with evoo, over medium-high heat. Sauté onion until dark brown, very soft, and fragrant.

Divided yogurt between serving bowls and arrange lentils, onion, and figs. Garnish with chopped parsley.
