Loaded Breakfast Cobb Salad with Green Goddess Dressing

Ever had a salad for breakfast? Give this loaded breakfast cobb salad with green goddess dressing a shot, you won't be disappointed!

 1 pt strawberries, sliced
 1 cucumber, sliced
 1 head romaine lettuce, torn into bite-sized pieces or coarsley chopped
 1 pt cherry tomatoes, sliced in half
 1 avocado, thinly sliced
 4 oz blue cheese, crumbled
 3 tbsp finely chopped chives
 4 eggs, hard boiled
 4 oz bacon (about 4 slices), cooked and cut into 1/2" pieces
For Dressing:
 2 scallions, finely chopped
 2 tbsp chopped fresh chives
 2 tbsp chopped fresh cilantro
 2 tbsp chopped fresh parsley
 ¼ cup Colavita Extra Virgin Olive Oil
 2 tbsp Colavita Aged White Wine Vinegar
 2 tbsp plain Greek yogurt

Purée scallions, chives, cilantro, parsley, Colavita olive oil, Colavita vinegar, and the yogurt in a food processor until smooth. Thin dressing with water, adding a little at a time, until similar in consistency to heavy cream; season with salt and pepper.

Assemble the Salad:

Divide the romaine lettuce between two bowls. Top with the strawberries, cucumber, tomatoes, bacon, and blue cheese.

Each bowl should receive ½ an avocado, sliced, and two hard boiled eggs, sliced in half. Drizzle with green goddess dressing and serve!
