Mac-n-Cheese with Crispy Topping by @sarah_licious_eats

Yields8 Servings

 1 bag (16oz) Colavita Elbow Pasta
 4 cups half and half, room temp
 6 tbsp butter
 3 tbsp flour 
 2 tbsp paprika 
 2 tbsp dried mustard
 1 tsp salt
 1 tsp pepper 
 ½ tsp nutmeg 
 1 tbsp garlic powder 
 3 tbsp cream cheese, room temp
 ½ cup smoked Gouda 
 1 ½ cups cup sharp cheddar 
 1 cup pepper jack cheese
Garnish
 1 tbsp chopped parsley 
 ¼ cup grated parmesean

Bring a pot of salted water to a boil and cook elbow pasta for 4 minutes. Drain and set aside.

In a saucepan melt the butter. Once melted, whisk in flour and cook on medium heat for 1 minute. Stir in half and half while whisking.

Bring to a simmer and cook for 3 minutes (until sauce thickens) add cream cheese and seasonings.

Remove from the heat. Stir in gouda, sharp cheddar, and pepper jack cheese. Immediately add sauce to pasta, then transfer to a baking dish. Top with parmesean cheese , cover with foil and bake for 15 minutes at 375. Remove foil and broil at 500 for 4 minutes.
