Melon and blackberry salad with honey-ginger vinaigrette is great with grilled fish or chicken. Marinate for a full four hours for the best flavor.

Melon and Blackberry Salad with Vinaigrette

 ¼ cup honey
 2 tbsp finely grated fresh ginger
 2 tbsp fresh lemon juice
 1 tsp Calabrian chile paste or similar chile sauce, such as sambal oelek
 Kosher salt
 ¼ cup Colavita Extra Virgin Olive Oil
 6 cups mixed melon, such as cantaloupe, casaba, honeydew, or watermelon, cut into bite-size pieces
 ½ cup medium diced sweet onion
 4 oz blackberries
 ¼ cup lightly packed chopped fresh mint
 ¼ cup lightly packed chopped fresh basil

In a large bowl, whisk the honey, ginger, lemon juice, chile paste, and 1/2 tsp. salt. Slowly whisk in the olive oil until the dressing is emulsified. Add the melon and onion, and toss to coat. Refrigerate for one to four hours. Toss with the blackberries, basil, and mint. Serve.
