Peanut Butter and Banana Mini Waffles

These mini waffles are the perfect cycling snack. Packed with good for you carbs, protein and potassium, they will keep your legs spinning strong on your next long ride!

For the waffles:
 1 ¾ cups all-purpose flour
 2 tbsp sugar
 3 tsp baking powder
 ¼ tsp salt
 ¾ cup creamy peanut butter
 ½ cup Colavita Olive Oil
 2 large eggs, room temperature
 1 ¾ cups 2% milk
 1 cup mashed ripe bananas (about 2 medium)
Topping:
 2 tbsp granulated sugar
 2 tsp ground cinnamon
Equipment:
 Standard or mini waffle maker
 Ice cream scoop
Make the topping:

Combine the sugar and cinnamon in a small bowl and stir. Set aside.

Make the waffle batter:

In a large bowl, whisk flour, sugar, baking powder and salt.

Add the peanut butter, Colavita olive oil, eggs and milk. Whisk just until just combined.

Stir in bananas.

Bake in a preheated waffle maker according to manufacturer’s directions until golden brown.

Sprinkle still warm waffles with cinnamon sugar mixture.

Allow to cool.

Store in the refrigerator in a sealed container for 3 days or freeze for up to a month.
