 3 tbsp Colavita Extra Virgin Olive Oil
 1 small onion or large shallot, minced
 3 cloves of garlic, crushed
 ½ tsp oregano
 salt and pepper
 ½ tsp teaspoon crushed red pepper
 14 oz Colavita Whole Peeled or Diced Tomatoes
 ¼ cup heavy cream
 1 lb Italian sweet pork sausage, removed from casings and broken in to small pieces
 grated Parmesan cheese
 ¼ cup parsley, chopped
 1 lb Colavita Farfalle

Heat the oil in a large pan over medium-low heat.

Add the sausage to the pan and sauté. As the sausage cooks, break it into small pieces with a wooden spoon. Cook until the sausage is browned and cooked through.

If too much fat has accumulated in the pan, you can drain it off, but leave about 2 tablespoons (a little fat goes a long way).

Add chopped onions and garlic and sauté about 3 minutes, until translucent.

Season with salt and pepper and add the dried oregano and hot pepper flakes.

Pour in the can of tomatoes.

Bring to a simmer and add the heavy cream.

Reduce the heat and cook to very low and simmer for 20 minutes.

In the meantime, bring a large pot of water to a boil.

Salt the water generously and add the pasta.

Cook until al dente (check package instructions).

Drain the pasta in a colander, and place the cooked, drained pasta into a large pasta serving bowl.

Add in the sauce and toss to coat.

Garnish with grated Parmesan cheese, and chopped parsley.
