Mrs. Iaciofano’s Farfalle

This is our Marketing Director’s mom’s family-famous recipe for Farfalle with Sausage. It’s a crowd pleaser, and quick to throw together, so if you’re in a pinch and need a delicious dinner, this recipe is for you!

 3 tbsp Colavita Roasted Garlic Extra Virgin Olive Oil
 ½ tsp crushed red pepper
 14 oz Colavita Whole Peeled or Diced Tomatoes
 1 lb Italian sweet pork sausage, removed from casings and broken in to small pieces
 grated Parmesan cheese
 1 lb Colavita Farfalle
 salt and pepper

Heat the Colavita oil in a large pan over medium-low heat.

Add the sausage to the pan and sauté. As the sausage cooks, break it into small pieces with a wooden spoon. Cook until the sausage is browned and cooked through.

If too much fat has accumulated in the pan, you can drain it off, but leave about 2 tablespoons (a little fat goes a long way).

Season with salt and pepper and add the hot pepper flakes.

Pour in the tomatoes.

Bring to a simmer. Reduce the heat and cook to very low and simmer for 20 minutes.

In the meantime, bring a large pot of water to a boil.

Salt the water generously and add the pasta.

Cook until al dente (check package instructions).

Drain the pasta in a colander, and place the cooked, drained pasta into a large pasta serving bowl.

Add in the sauce and toss to coat.

Garnish with grated Parmesan cheese.
