Whether you're going to a party or need a quick snack for the family, these olive oil chocolate and cherry krispie treats are easy to make and take minimal time to do so!
Line an 8x8-inch baking pan with aluminum foil or parchment paper, leaving some hanging over the sides like handles. Pour a small amount of Colavita Olive Oil onto the foil and spread it around with a paper towel to grease the foil. Set aside.
In a large saucepan (we like to use a big pasta pot) over medium heat, combine the maple syrup, peanut butter, and Colavita Olive oil. Stir until smooth and creamy.
Remove from heat and stir in the vanilla extract and salt. Add in the chocolate brown rice cereal and dried cherries, stirring until the cereal is evenly coated.
Pour the mixture into the prepared baking pan. Using a spatula or large spoon, press the mixture into a tight, even layer. Cover and place in the refrigerator for 30 minutes to set.
If you'd like to add the chocolate drizzle, melt the chocolate in a microwave-safe bowl or a heatproof bowl set over a pan of simmering water.
Drizzle over the top of the treats with a spoon.
Place the pan back in the refrigerator for a few minutes to allow the chocolate to set.
Remove the treats from the pan with the parchment or foil handles. Using a very sharp knife, cut into squares and serve.
