This sweet treat has a sneaky healthy ingredient - chickpeas! You won't believe how they really taste like cookie dough! Give it a try for a mid-afternoon snack or a breakfast on the go!

Chickpea Cookie Dough Pops

 1 ½ cups chickpeas, rinsed and drained
 ¼ cup peanut butter
 ½ tsp cinnamon
 ½ cup coconut milk
 3 tbsp honey
 15 drops stevia
 1 tsp vanilla
 pinch of salt
 ¼ cup ground flaxmeal
 2 tbsp Colavita Extra Virgin Olive Oil
  cup dark chocolate chips

Blend all ingredients together until smooth adding chocolate chunks etc last to maintain their texture.

The mixture should be thick but creamy. Spoon into ice pop molds and add a stick.

Freeze until solid.

Defrost for a few minutes prior to eating for optimum eating experience!
