Run out of butter, or looking for a different way to make potatoes? Try these olive oil mashed potatoes and you won't want them any other way!

Olive Oil Mashed Potatoes

 2 ½ lbs large russet potatoes, peeled and cut into 1-inch chunks
 Kosher salt
 1 small clove garlic
 ½ cup Colavita Extra Virgin Olive Oil, plus more to finish

Put the potatoes in a medium saucepan and cover with cold water by at least 1 inch. Add 1 Tbs. salt, bring to a boil and cook at a medium boil, until the potatoes are tender when pierced with a fork, about 12 minutes. Strain the potatoes through a colander and return to saucepan. Dry the potatoes over high heat, stirring with a wooden spoon, about 1 minute.

Press the garlic through a garlic press and mix with the olive oil and ½ teaspoon salt. Add the olive oil mixture to the potatoes. Use a potato masher to roughly mash the potatoes. Drizzle with olive oil and serve.
