Peloton Instructor Jess King’s Summer Recipes

It’s officially summertime and we are excited to partner with Peloton Instructor Jess King to bring you three quick and healthy recipes to enjoy! Cook along with Jess and her partner, Sophia, on their new Ooo Mami episode presented by Colavita!

Colavita Organic Balsamic Glaze
 2 cups Colavita balsamic vinegar
 ½ cup dark brown sugar
Colavita Organic Olive Oil Chicken Marinade
 1 cup Colavita Olive Oil
 34 lemons, juiced
 ½ cup finely chopped cilantro (you can also substitute with basil, parsley rosemary, or thyme)
 Salt 
 Pepper
 Red pepper flakes 
Colavita Organic Olive Oil Tahini Dip
 2 tbsp Colavita Olive Oil
 ½ cup tahini
 lemon, juiced (to taste)
 ½ tbsp agave
 2 tbsp water
 Salt
 Pepper
 Paprika
Colavita Balsamic Glaze:

Heat a pan with medium heat. Combine ingredients in stainless steel saucepan and stir to dissolve the sugar. Keep the pan uncovered & bring to a gentle boil, then immediately reduce to a simmer for 20 minutes until the liquid has reduced about half the amount. When the glaze coats the back of a stainless-steel spoon or spatula, it’s ready to enjoy drizzled over your favorite roasted vegetables or protein!

Colavita Olive Oil Chicken Marinade:

In a bowl, whisk ingredients together generously. Pour marinade into a Ziploc bag with chicken or protein of choice. Marinate for at least 1-3 hours. Make a separate batch of the marinade to brush over the protein before, during, and after grilling. Plate to your liking and enjoy!

Colavita Olive Oil Tahini Dip:

Add tahini to a bowl, whisk in lemon juice, water (1 tbsp to start), agave and olive oil. Add more water if you prefer a thinner consistency. Whisk in salt & pepper and TASTE! After plating veggies or protein of your choice, drizzle with more olive oil and add a generous sprinkle of paprika.
