Open-Faced Caprese on Focaccia

A simple and quick mini sandwich that is perfect for picnics, tea parties, brunches and lunches!

Open-Faced Caprese on Focaccia

 1 large sheet (about 12” x 18”)
 1 loaf focaccia bread from your local baker
 2 lbs fresh mozzarella cheese, cut into thin slices
 6 large, ripe tomatoes, cut into thin slices
 fresh basil
 Colavita Balsamic Glaze
 Colavita Extra Virgin Olive Oil
 sea salt

Using a serrated knife, slice the focaccia lengthwise so there is a top and a bottom.


Each piece of focaccia will now be the base of this sandwich. Place the focaccia on a large cutting board. Top with the mozzarella slices and tomato.


Sprinkle with sea salt, and drizzle with Colavita Olive Oil and Balsamic Glaze.


Slice the topped focaccia lengthwise into three strips and then crosswise into four. This will yield about 12 small rectangle sandwiches.


Repeat with the other side. Top each open-faced sandwich with a leave of fresh Basil.


Serve with green tea!
