Orecchiette with Spicy Clam Sauce

Simple and delicious, orecchiette is usually paired with vegetable sauces, However, this recipe uses a clam sauce with a variety of flavorful spices and herbs to mix up the dish. To make an even more impressive presentation, buy some whole clams to steam and place on the dish.

 1 lb Colavita Orecchiette, cooked according to package directions
 ½ cup Colavita Extra Virgin Olive Oil
 4 cloves garlic, thinly sliced
 13 oz minced clams, drained
 ½ tbsp fresh minced basil leaves or ½ teaspoon dried
 ½ tbsp fresh minced oregano leaves or ½ teaspoon dried
 ½ tsp salt
 ½ tsp crushed red pepper flakes
 3 tbsp fresh chopped parsley
 2 cups firmly packed freshly torn spinach leaves
 1 cup shredded parmesan cheese
 2 tbsp toasted pine nuts
 fresh basil sprigs for garnish, if desired

While pasta cooks, combine oil and garlic in large saucepan, cook over medium-high heat, stirring occasionally, until garlic starts to sizzle; add clams, basil, oregano, red pepper flakes, and salt.

Reduce to low heat; cook stirring constantly, 5 minutes. 2. Drain pasta; add to clam mixture. Add parsley and spinach, tossing until spinach turns bright green.

Transfer to large serving platter. Sprinkle with Parmesan cheese and pine nuts. Garnish with fresh basil sprigs, if desired
