Why roast a tomato? Roasting a tomato intensifies their characteristic flavors. Those tangy, juicy notes become deeper and richer. It’s an instant flavor punch. For this Sicilian pizza, a pop of flavor is just what’s needed. And once you trim the final pizza product into appetizer-sized pieces, you’ll have created tiny edible parties for holiday gatherings, pot lucks and school lunches!

Oven Roasted Tomatoes

4-5 medium tomatoes—Use different colors to make a pretty pattern
1-2 tbsp of Colavita Extra Virgin Olive Oil
freshly chopped herbs such as rosemary and thyme
 sea salt
1 baking sheet lined with parchment paper
1

Preheat the oven to 350°F.

2

Slice the tomatoes in 1/4” thick slices.

3

Line them up on the parchment-lined baking sheet.

4

Drizzle the tomatoes with Colavita Extra Virgin Olive Oil and sprinkle with sea salt and fresh herbs.

5

Bake in the oven for about 20 minutes, until the tomatoes start to shrivel and dry up. Don’t let them get too dry, as you will be baking them on a pizza.

6

Remove them from the oven and set aside for the pizza topping or serve as an appetizer.
