For this Sicilian pizza, a pop of flavor is just what’s needed. And once you trim the final pizza product into appetizer-sized pieces, you’ll have created tiny edible parties for holiday gatherings, pot lucks and school lunches!
Preheat the oven to 350°F.
Slice the tomatoes in 1/4” thick slices.
Line them up on the parchment-lined baking sheet.
Drizzle the tomatoes with Colavita Extra Virgin Olive Oil and sprinkle with sea salt and fresh herbs.
Bake in the oven for about 20 minutes, until the tomatoes start to shrivel and dry up. Don’t let them get too dry, as you will be baking them on a pizza.
Remove them from the oven and set aside for the pizza topping or serve as an appetizer.
