Pasta with Calamari Sauce

Our pasta with calamari sauce dish is a traditional recipe, best served with a pasta shape like cavatappi.

 2 lbs whole squid with tentacles, cleaned and cut (see notes)
 2 tetrapacks Colavita Crushed Tomatoes
 1 tbsp parsley
 dried oregano
 Salt and pepper, to taste
 4 tsp Colavita Extra Virgin Olive Oil
 2 cloves garlic, chopped
 ½ cup dry sherry
 1 lb Colavita Cavatappi

Clean and cut the squid. Rinse with cold water and pat down with paper towels.

Leave the tentacles intact and cut the main body into segments.

In a large saucepan, combine the tomatoes with the parsley, oregano, salt and pepper; simmer for 30 minutes.

Meanwhile; heat the oil over medium high heat in a frying pan; add the garlic; lightly brown. Add the squid and saute for 10 minutes. Add the sherry and stir.

Add the squid mixture to the tomato sauce and simmer gently for 15 minutes.

Add cooked Rigatoni to the sauce and Serve.
