 4 ripe but still firm peaches, cut into ½” thick slices
 2 large zucchini, sliced into 2” rectangles
 8 oz Haloumi cheese cut into strips
 Basil leaves
 Aleppo Pepper Flakes
 Colavita Extra Virgin Olive Oil
 Kosher salt to taste
Garnish:
 4 tbsp Colavita Balsamic Glace
 Fresh basil leaves

Heat your grill to medium high.

Take a skewer and thread one peach slice on the bottom. Follow with zucchini and haloumi cheese in any order you like. Repeat until the skewer is complete.

Place the prepared skewers on a platter.

Drizzle them with Colavita olive oil and sprinkle with sea salt.

Grill the skewers for 2 minutes on each side.

Remove to a platter. Garnish with the Colavita Balsamic Glaze, red pepper flaked and fresh basil.
Serve.
