Pizza Waffles

Everything is better in waffle form, including our pizza waffles. These are the college kid's dream come true, especially since they're so easy.

PIzza Waffles

 Colavita Extra Virgin Olive Oil
 1 round of fresh pizza dough, divided into 4 equal parts (note: if you buy frozen dough, let it thaw to room temperature). Pillsbury pizza dough works very well.
 24 oz Colavita Strained Tomatoes
 ½ lb mozzarella cheese
 ½ tsp sea salt
 Garnish: grated parmesan cheese
 Optional: prosciutto, ham, fresh basil

First, grab a waffle iron and heat it up. Oil the inside lightly with Colavita Olive Oil.

Flatten out each of the four pieces of pizza dough into small rounds.

Place a small dollop of tomato sauce on two of the rounds. Top with mozzarella, a pinch of sea salt and (optional) a slice or two of prosciutto or ham. Place another piece of pizza dough on top of this to seal it like a sandwich.

Make sure not to overstuff your dough, as it will leak out the sides and make a mess when pressed in the waffle iron.

Place both pizza sandwiches on the heated waffle iron and close the lid. Cook until the light signals that the waffles are done.

Open the lid and remove the waffles (careful – they will be hot!). Garnish with some grated parmesan if desired!
